The Blackberries are abundant and delicious for puddings, making jams, sauces, and even cocktails. So if your entertaining over the next few weeks Blackberry Margaritas are easy to make and delicious:
10 ozs blackberries + more for garnish
1 tbsp lemon (or lime) juice
4 floz champagne
2 floz tequila
- Put the blackberries, lemon juice, and sugar into a cocktail shaker if you have one, if not use a large jam jar with lid or wide neck bottle with screw top. Using a large spoon crush the berries and stir mixture until juicy.
- Add tequila, cap the shaker, and shake until mixture is well-combined.
- Uncap shaker and pour mixture directly into 2 champagne glasses. Divide champagne between glasses, and stir gently – You can strain the liquid before adding to the glasses to get rid of the seeds or leave as it is.
- Garnish with more blackberries and some mint leaves
